Cheesy potato casserole

Do you feel tired after an exhausting work day? If you don’t have a desire to seek a recipe for some new dish, then take a note of the cheesy potato casserole recipe. It is very simple, so you will manage to cook this dish even if you are not a chef. You simply need to boil potatoes, brown bacon and place the dish in an oven. Now you can have a rest for 20 minutes, while the casserole is baking. Such a recipe can become a good solution for a family dinner. Even your children can cook this dish by themselves, in case you are late from work.

Ingredients:

  • 2 leeks
  • 2 tbsp olive oil
  • 120 g (4 oz) bacon
  • 800 g (1,7 lb) potato
  • a twig of fresh rosemary
  • 100 g (3,5 oz) hard cheese

Cooking

Rinse potatoes, boil them in salted water for 10 minutes. Wash, chop leeks and add to the pan in 2 minutes before the end of boiling. Drain the water, peel potatoes and chop them finely.

Cut bacon into thin slices, preheat olive oil in an anti-adherent frying pan. Brown the bacon till crisps for 4-5 minutes. Toss the bacon, potato and leeks together. Add rosemary. Sprinkle the ingredients with salt and pepper. Stir the mass until well combined and spread evenly into a ceramic baking dish. Top everything with grated cheese. Bake the dish in an oven till golden and puffed for 20 minutes. Set the casserole aside before slicing so it can settle.
