Christmas Kutia

Kutia is one of twelve dishes which are cooked for Christmas. Moreover, kutia is the main dish of Christmas table which is served first.

In this recipe you’ll find out how to make delicious and flavorful Ukrainian Christmas kutia even if you are going to cook it for the first time.

Ukrainians believe that the more tasty kutia is the more success and wealth you’ll have the next year. That is why this dish is cooked with special care and attention.

Ingredients:

  • 2-3 tbsp honey
  • 3 l (liter) of water
  • 2 tbsp cranberry jam
  • 1/2 cup of poppy seeds
  • 2 cups of peeled barley

Cooking

Wash peeled barley thoroughly. Boil it over medium heat until done stirring the mass continuously. Scum during boiling.

Put poppy seeds in a bowl and pour boiling water above. Set aside for 5 minutes and then pour off the water. Wash poppy seeds and pour with boiling water again. Leave for 10 minutes and then pour off water. Grind poppy seeds with a pestle adding 1 tsp of boiling water to 1 tbsp of poppy seeds.

Combine the poppy seeds with the peeled barley. Add honey and cook the mass over low heat for 5-7 minutes. Turn off fire and mix our kutia with cranberry jam.
