Crispy spiced pear pie with vanilla whipped cream

1649Today we will cook a crispy spiced pear pie with vanilla whipped cream. You can serve this dessert during Sunday tea drinking or on a special occasion. This pie includes delicious combination of soft pears with cream and vanilla extract which gives the cake tenderness.


  • 2 glasses of flour
  • 1/4 glass of sugar
  • 1/2 tsp salt
  • 170 g (0,37 lb) cold dairy butter
  • 6 tbsp cold water
  • 1 tsp vanilla
  • 1 tsp almond extract
  • 1 egg
  • 1 tbsp sugar


  • 6 pears
  • 1/4 glass of brown sugar
  • 1/4 glass of sugar
  • 2 tbsp apple cider vinegar
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 2 tbsp starch
  • 2 tbsp chopped almond
  • 1/4 tsp cinnamon
  • a pinch of nutmeg

Whipped cream

  • 225 g (0,5 lb) cream
  • 2 tbsp sugar
  • 2 tsp almond extract


In a large bowl, combine together flour, sugar and salt. Then add diced dairy butter, water, vanillin and almond extract. Whip the ingredients for a couple of minutes. Place the mixture onto a well-floured work surface and knead the dough. Cover it with a cling wrap and refrigerate for half an hour.

Let’s cook the filling in the meantime. Wash, peel, core the pears and dice the fruits. Toss all necessary ingredients for the filling and mix them carefully. Set aside.

Preheat the oven to 200°C (392°F). Grease a baking cup with dairy butter. Take the chilled dough and roll it into a large circle. Transfer it to the baking cup and spread the dough so that it should cover the rims of the baking cup. Place the filling above the crust leaving the boarder and fold the border over the filling. It should cover the filling partially. Grease the dough with an egg and top with sugar. Place the pie in an oven and bake it until golden brown and puffed. When the tart is done, remove it from the oven and cool the dessert.

Whisk cream until it begins to thicken. Then add sugar and almond extract. Whip everything again and place the mass in a fridge.

Cut the pear pie into portions, top them with whipped cream and chopped almond. Serve the pear pie warm or at room temperature.
