Croissants with guelder rose berry filling

Ingredients:

  • 1 egg
  • 1/3 tsp salt
  • 4 tbsp sugar
  • 300 ml milk
  • 460 g (1 lb) flour
  • a pinch of vanilla
  • 20 g (2 tbsp) yeast
  • 5,5 tbsp dairy butter

Filling

  • 1/4 cup of sugar
  • 2 tsp lemon peel
  • 250 g (1/2 lb) guelder rose berries

Cooking

Preheat milk and dissolve yeast there. Add 1 tbsp of sugar, 2 tbsp of sifted flour. Stir everything to combine. Leave the mass for 20 minutes.

Whip an egg mixed with sugar. Sift the remaining flour and combine it with melted dairy butter,  salt, remaining milk, predough and the sugar-egg mass.

Knead the dough, cover it with a napkin and leave for 1 hour. The dough should increase in volume.

Place rinsed guelder rose berries in a stewpan and preheat them over medium heat. Then add sugar and grated lemon peel. Cook the mass until it becomes thick, for 15 minutes.

Punch the dough and separate it into two parts. Roll the crusts with 2 mm thickness each. Cut them into triangles. Put the filling on a wider part of the triangle.

Wrap each triangle into a roll. Cover the baking tray with a parchment paper. Transfer the croissants there and leave them for 15 minutes. Bake the dessert in the preheated oven at 175°C  (347°F) for 20 minutes. Top the croissants with powdered sugar before serving.
