Crunchy Vegetable Cutlets

Find out the recipe of a delicious vegetable appetizer. Such popular and simple snack item as a vegetable cutlet is a great idea for family parties and get-togethers. Our veg patties make a perfect combination of an eggplant, marrow, brynza or feta cheese, parsley, and dill. These golden cutlets with a tender filling and crispy skin are very nourishing and can be served together with a sour cream sauce or any other sauce you like. Cooking such cutlets will help you diversify your everyday dinner options. Once trying this recipe, you can then fantasize and make some experiments with other vegetables and their combinations.

Ingredients:

  • 1 egg
  • 1 eggplant
  • 5 tbsp flour
  • 30 ml vegetable oil
  • 1 vegetable marrow
  • 150 g (5 oz) brynza (feta cheese)
  • fresh parsley – to taste
  • fresh dill – to taste
  • salt – to taste

Cooking

Place a marrow in a pan. Pour boiling water above. Then cool the marrow and peel it. Peel and dice an eggplant. Dice brynza or feta cheese. Wash parsley and dill. Chop the ingredients finely. Toss the marrow, eggplant, parsley, and dill together. Add an egg and mix everything properly. Stir in flour gradually. You should get a slightly chunky mixture. Check the taste and add salt if necessary.

Divide the prepared mixture into equal parts, shape balls by putting a piece of brynza or feta cheese in the center of each cutlet. Flatten the vegetable balls.

Preheat vegetable oil in a frying pan. Fry the cutlets over medium heat until golden and crispy. Serve the cutlets hot.
