Cucumbers stuffed with eggs and radish



  • 600-700 g of cucumbers (2 big long cucumbers)
  • 2 eggs
  • 2 radish bundles
  • 3-4 tbsp of thick sour cream
  • 1 tbsp of chopped dill
  • 1 tbsp of finely cut spring onion
  • parsley
  • salt – to taste


Peel hard-boiled eggs and chop them. Grate radish (leave 1 radish). Mix eggs, radish, sour cream, dill, spring onion and salt properly. Peel cucumbers, cut them into two parts and remove the seeds. Fill the cucumbers with cooked mass. Decorate them with radish and parsley.
