Mutton cutlets

Ingredients:

  • 600 g of mutton
  • 100 g of white bread
  • 0.5 of glass of broth/water
  • 4 tbsp of ground rusks
  • 3-4 tbsp of lard/fat
  • 4 eggs
  • 3 cloves of garlic
  • black ground pepper– to taste
  • parsley/ dill – to taste
  • salt – to taste

Cooking

Cut mutton and grate it finely. Soak slightly parched white bread in broth or water. Mix the mutton and the bread. Grate the combined ingredients. Peel cloves of garlic, squeeze and salt them. Stir in the garlic, pepper and 2 raw yolks to the minced meat. Mix everything properly. Shape meatballs, dip them in 2 yolks, roll in ground rusks and fry on the preheated lard or fat. The cutlets should become golden and crispy. Top them with chopped parsley or dill before serving.
