Egg, Cucumber and Smoked Mackerel Salad

Mackerel is a very tasty fish which doesn’t contain many fish bones and has lots of positive features which enable us to use this product as a component of various dishes. You can fry, boil, marinate or salt mackerel. This fish can be cooked in many different ways and always has a delicious taste. For instance, smoked mackerel is a good dish all by itself. However, you can also cook a tasty and nourishing salad with mackerel and an egg, apple, pickled cucumbers, and leek which will catch your fancy. Besides, a special dressing with a lemon zest imparts the dish an unusual and piquant taste.

Ingredients:

  • 2 eggs
  • 1 apple
  • 3 tbsp olive oil
  • 100 g (3,5 oz) leek
  • 3 tbsp lemon juice
  • 2 pickled cucumbers
  • 300 g (10,5 oz) smoked mackerel

Cooking

Boil eggs, then peel them and cut into medium pieces. Peel a smoked mackerel and slice it thinly. Rinse an apple, peel it, remove the seeds and slice the apple. Sprinkle the fruit with a lemon juice. Wash leek and cut it into circles. Cube pickled cucumbers. Toss all the ingredients together in a bowl. Combine olive oil, the remaining lemon juice, salt, and pepper. Dress the salad with the prepared sauce and mix everything properly. Place the dish in a fridge for 10 minutes and then serve it.
