Egg stuffed tomatoes



  • 1 kg of tomatoes
  • 2 tbsp sunflower oil
  • 3 tbsp vinegar (3%)
  • 6 eggs
  • 1 tbsp sugar
  • 1 tsp mustard
  • 1 tbsp parsley
  • salt – to taste


Wash tomatoes and cut off the caps. Remove the seeds. Squeeze the juice slightly and salt the tomatoes.

Cook hard boiled eggs. Peel them. Divide the third part of the yolks. Cut the remaining part of the eggs finely. Add salt and chopped parsley. Stuff the tomatoes with the prepared filling.

Rub the third part of the yolks with mustard, oil, sugar, vinegar and salt. Pour the tomatoes with the prepared mixture.
