Goose liver salad


  • 200 g goose liver
  • 100 g lettuce
  • 100 g tomatoes
  • 6 tbsp vinegar (3%)
  • 5 tbsp dry white wine
  • 4 tbsp sunflower oil
  • 60 g bulb onion
  • 5 g thyme
  • salt – to taste
  • ground black pepper – to taste
  • mustard – to taste


Boil the liver until half-ready. Chop it and adjust pepper and thyme to your liking. Slice the tomatoes.

Peel bulb onion, cut it and slice lettuce. Fry the ingredients till golden color. Then add the goose liver and fry the mixture for 5 minutes more. Stir the dish continuously.

Combine vinegar with dry white wine and sunflower oil. Add salt, pepper and mustard. Mix everything thoroughly and season the dish with the cooked sauce.
