Hot Vegetable Marrow Adzhyka Sauce

Adjika sauce is a delicious spicy condiment which can be served with roasted meat as well as vegetables or just a piece of bread. If you want to add some flavor to your dishes, then this sauce is a perfect option. The piquant condiment includes the combination of vegetable marrows, carrot, chili pepper, onion and garlic. One more advantage of this adjika sauce is that you can treat your family with it as soon as you cook or you may preserve the condiment and use it to cook savoury dishes in winter.

Ingredients:

  • 3 tbsp salt
  • 1 tbsp sugar
  • 2-3 bulb onions
  • 6 big garlic bulbs
  • 3 big chili peppers
  • 2 cup vinegar (6%)
  • 1 cup sunflower oil
  • 300 g (10,5 oz) carrot
  • 5 kg (11 lb) vegetable marrows

Cooking

Wash all vegetables (excluding garlic and bulb onion) carefully. Peel vegetable marrows and chili peppers, deseed and dice them. Mince or grind the prepared vegetables properly but not until smooth since the mass should have some texture. Peel carrots and grate them finely and add to the mass. Transfer the ingredients to a pan, add sugar and salt. Boil the sauce for one hour, stirring continuously.

Peel bulb onions and garlic bulbs, chop them and combine with sunflower oil and vinegar. Mix everything and put in a frying pan. Fry the mass for a while and then add it to the sauce. Cook it for 30 minutes more. Pour the prepared sauce in sterilized glass jars and cork them up. You may serve the cooked adjika sauce at once or store it up to a year.
