We offer a quick recipe of cupcakes. The baked goods with jam filling are soft and moist. The unicity of this recipe lies in the fact that you can use any jam.
Try to bake this dessert by yourself. A warm atmosphere of the family tea-drinking and the smell of the oven-fresh cakes will warrant the expended effort.
- 5 eggs
- 1 tsp salt
- 1 tsp soda
- 1/2 cup jam
- 200 g (7 oz) sugar
- 350 g (12 oz) flour
- a pinch of lemon extract
- 250 g (1 cup) dairy butter
- dairy butter (for greasing)
- 25 g (3 tbsp) chopped candied fruits
Melt dairy butter and grate it with sugar properly. Add eggs and whip everything well. Combine the mixture with sifted flour, chopped candied fruits, soda, salt and lemon extract. Mix the ingredients until fluffy and light. Divide the batter evenly and pour it into the muffin tins, greased with dairy butter and dredged with flour. Add half of a teaspoon of jam above to each tin and after cover it with the remaining batter.
Bake the cupcakes in an oven until puffed and golden. Next, remove the dessert from the oven and set aside to cool. Serve the jam cupcakes with fruit or herbal tea.
