Knedlyky with strawberry and huslianka

Try the national cottage cheese dessert with strawberry filling and creamy topping.


(for four)

  • 1 kg of curds (cottage cheese)
  • 5 eggs
  • 60 g of dairy butter
  • 60 g of vanilla sugar
  • 50 g of dried breadcrumbs
  • 12 strawberries
  • some mint twigs


  • 6 yolks
  • 40 g of honey
  • 200 ml of cream (33%)
  • 20 g of starch
  • 1 packet of vanillin


Grate curds or cottage cheese through a sieve. Add 4 frothed eggs, sugar and dried breadcrumbs. Mix everything properly and divide into 12 portions. Form flat cakes. Powder a table with breadcrumbs. Put one strawberry in the centre of each flat cake. Shape a ball from the flat cake. Repeat the procedure till you get twelve balls.

Whip an egg. Dip each ball in it, then roll it in the breadcrumbs. Bring water to boil, add sugar (1 tbsp of sugar for 1 liter of water), mint twigs and knedlyky to the pan. Boil knedlyky until they emerge afloat.


Bring cream to boil. Add vanillin, honey, frothed yolks and starch. Mix the ingredients thoroughly.

Place knedlyky on a plate, pour them with huslianka and serve.

Tip! You can decorate the dessert with mint twigs and pour it with strawberry jam.
