Lean Vegetable Soup

If you want to eat something nourishing and the same time non-caloric, then try to cook this lean soup. It is full of fresh veggies which make the dish not only tasty but also useful. There is so much good stuff in the soup that it makes you feel very healthy. In addition, our dish has a piquant zest imparted by lemon juice and ginger. The recipe of this soup can be easily doubled or even tripled to feed all family members at your table.

Ingredients:

  • 2 tbsp olive oil
  • 2-3 stalks leeks
  • 2 tsp lemon juice
  • 350 g (12 oz) potato
  • 30 g (1 oz) ginger root
  • 500 ml vegetable broth
  • 250 g (1/2 lb) bulb onion
  • black ground pepper – to taste
  • salt – to taste

Cooking

Peel bulb onions, chop them finely. Mix the onion with salt. Preheat olive oil in a frying pan, add the onion and fry until golden. Peel and cube potatoes. Place them in a pan and pour with 1 liter of water. Add salt, peeled and chopped ginger root. Then put cleaned and sliced leeks in the pan. Bring water to boil and simmer the ingredients until they become soft, about half an hour. Then add the fried onion and vegetable broth. Pour the lemon juice into the pan. Adjust salt and pepper to your taste. Stir everything properly. Pour the dish into soup plates and serve.
