Marinated Herring with Carrot and Onion (Carpathian Recipe)

Herring is rather popular among the Ukrainians. So, today we are going to cook a piquant herring and vegetable appetizer.

Marinated in the special sauce the herring is a great delicacy. The marinade, a combination of oil, vinegar, sugar, pepper, and salt, is an excellent way to enjoy the herring. There is something special in this marinade which adds a personal touch to this fish.

This marinated herring with carrot, onion, bell pepper, and parsley will become a wonderful starter anytime.

Ingredients:

  • 1 bell pepper
  • 200 g (7 oz) carrots
  • 100 ml vegetable oil
  • 1 kg (2,2 lb) herring
  • 200 g (7 oz) bulb onions
  • fresh parsley – to taste

Marinade

  • 1 tbsp sugar
  • 350 ml vegetable oil
  • 2-3 tbsp vinegar (9%)
  • black ground pepper – to taste
  • salt – to taste

Cooking

Wash herring and pat dry it. Cut off the fins and remove skin and bones. Cut the fish into long strips. Beat them slightly.

Peel bulb onions and slice them. Wash, peel, and cut carrots into thin slices.

Place a slice of onion and a slice of carrot above the herring piece and roll it. Repeat the procedure with other ingredients.

Combine vegetable oil with vinegar, sugar, black ground pepper, and salt. Mix everything thoroughly. The marinade is done.

Place the rolls in a bowl and pour them with the prepared marinade. Let the ingredients marinate for 10-12 hours.

Place the herring on a serving plate. Decorate it with fresh parsley and slices of a bell pepper.
