Nudli (Ukrainian style)

Nudli – are the Ukrainian dumplings in the form of roulades with chopped garlic and parsley. The dish is steamed with potato and meat in a rich sauce. The recipe for these nudli served with potato and pork is really worth trying.

Ingredients:

  • 600 g potatoes
  • 500 g pork
  • 1 bulb onion
  • 2 tbsp refined sunflower oil
  • 1 carrot
  • 2 pinches of black ground pepper
  • 2 pinches of ground caraway
  • 5 pinches of salt

Dough

  • 100 ml kefir
  • 1 tbsp refined sunflower oil
  • 200 g wheat flour
  • 1 bunch of fresh parsley
  • 1 g soda
  • 4 cloves of garlic

Cooking

Peel a bulb onion and a carrot. Slice them into semi-circles. Cut pork into cubes (2 × 2 cm each). Fry the vegetables on sunflower oil slightly. Then add the meat, salt, pepper and caraway. Cook the ingredients till brown. Pour boiling water in the frying pan in order to cover the meat. Stew everything over medium heat for 15 minutes.

Peel potatoes and slice them. Add potatoes to the frying pan. Salt and pepper the ingredients to taste. Cook everything over medium heat for 20 minutes. Add more water if necessary.

Combine kefir, soda and salt. Mix everything carefully. Add flour by portions and knead the soft, elastic dough. Leave it for 10 minutes.

Peel and chop garlic. Cut parsley finely. Roll out the dough and grease it with oil slightly. Top the dough with half of the garlic and parsley. Roll up the dough to roulade shape. Cut the roulade into pieces with 2-3 cm height each. Place nudli above potato and meat. Cover the dish with a lid and cook it over low heat for 20 minutes more.

Turn of the fire and top nudli with the chopped parsley and garlic. Serve hot.
