Ohirochnyk (soup with pickled cucumbers)

For today’s light dinner we will serve the popular dish in Ukraine – ohirochnyk. It is a piquant soup with pickled cucumbers based on a rich meat broth (we use chicken hearts). If you don’t eat the cucumber soup hitherto, then try it and you will not be disappointed. On top of that the savoury main dish contains a lot of useful vegetables.

Ingredients:

  • 1 cup pickled cucumbers
  • 90 g (3 oz) chicken hearts
  • 1 tbsp cut celery root
  • 1 tbsp cut parsley root
  • 1 tbsp cut bulb onion
  • 100 g (3,5 oz) bones
  • 120 g (4 oz) potato
  • 1 tbsp cut spinach
  • 1 tbsp cut carrot
  • a pinch of flour
  • 1 tbsp lard
  • salt – to taste
  • sour cream (for serving)
  • fresh dill/ parsley – to taste
  • cucumber pickle – to taste

Cooking

Rinse, peel and cut into circles a carrot, parsley and celery root. Sauté the ingredients. Wash, peel and slice potatoes.

Rinse bones and chicken hearts under running water. Slice the hearts. Pour water in a saucepan. Add the prepared vegetables, bones and meat. Dice cucumbers and put them in the pan after 10-12 minutes of boiling. Stir everything and remove scum from time to time. Next add flour and finely chopped spinach. Stir the soup components and cook them till done. Remove the bones.

Spoon the dish into a serving bowl. Dress the soup with the cucumber pickle, garnish it with sour cream, shredded dill or parsley. Serve ohirochnyk hot.
