Orange muffins



  • 1 orange
  • 2 eggs
  • 150 g of sugar
  • 100 g of dairy butter / margarine
  • 200 g of wheat flour
  • 1.5 tsp of baking powder
  • 1 tsp of vanilla


  • 2/3 glasses of caster sugar
  • 1 tsp of juice


Press juice out of an orange (100 ml). Grate orange rind. Whip eggs with sugar. Melt dairy butter or margarine and cool it slightly. Combine butter with eggs. Mix flour, baking powder, and vanilla. Sift them through the sieve. Add butter and eggs. Pour orange juice carefully (leave 1 tbsp for syrup) and stir the pastry gingerly. Place the pastry in the baking trays and bake muffins for 12-15 minutes at 200°C.

Combine caster sugar with orange juice. Pour muffins with the icing. Powder them with grated rind.
