Orange spiced pumpkin pie

Ingredients:

  • 3 cups of pumpkin (diced)
  • 300 g (10,5 oz) wheat flour
  • 1 cup of sugar
  • 2 tbsp honey
  • 30 ml cognac
  • 1 cup of raisins
  • 2 tsp leaven
  • 1 orange
  • 3 g cinnamon
  • 1/4 tsp ground cloves
  • dairy butter (for greasing)

Cooking

Peel a pumpkin and remove the seeds. Dice the vegetable finely. Combine sugar, honey, and cognac. Mix the ingredients and add the pumpkin. Stir everything again.

Rinse and squeeze an orange. Add grated zest, ground cloves, and cinnamon. Mix everything properly. Add the pumpkin mass and stir the ingredients. Place the mass in a microwave oven for 1 minute in order to let the pumpkin release juice and the sugar dissolve.

The next step is adding of flour and leaven. Mix everything properly and transfer the mass to a baking cup greased with dairy butter. Bake the pie at 180°C (356°F) for an hour. The dessert should not be dry inside, so in order to prevent overcooking check whether the pie is done or not by the help of a toothpick.
