Potato flapjacks under mushroom sauce

Today we cook traditional potato flapjacks the recipe of which is very popular among the Ukrainians. The dish is very tasty and nourishing but when it is served together with a delicious mushroom sauce – it is really something finger-licking good. Potato flapjacks under mushroom sauce – is a perfect variant for those who like mushrooms.

Ingredients:

  • 6 potatoes
  • 1 bulb onion
  • 2 cloves of garlic
  • 1 egg
  • 1 tbsp sour cream
  • 2 tbsp flour
  • 50 ml vegetable oil (for frying)
  • 1/2 tsp of salt
  • black ground pepper – to taste
  • Mushroom sauce
  • 300 g (10 oz) ceps
  • 1 bulb onion
  • 1 tbsp flour
  • 100 g (3,5 oz) sour cream
  • salt – to taste
  • black ground pepper – to taste

Cooking

Peel, wash and grate potatoes. Peel a bulb onion and grate it. Combine the ingredients. Add sour cream and mix everything properly. Beat the eggs slightly and add them to the mass. Next stir in flour and squeezed garlic. Season the mass with salt and pepper. Combine it well.

Preheat vegetable oil and pour large spoonfuls of the potato mixture in the skillet, flattening it into rounds by the help of the back of the spoon. Fry the flapjacks on both sides till golden brown and crisp.

Mushroom sauce

Rinse ceps, cut them into medium pieces and boil in salted water for 20 minutes. After roast the mushrooms on vegetable oil until done. Peel, chop the onion finely and sauté on vegetable oil until soft. Toss the prepared ingredients together.

Sauté flour on a dry skillet till it gets a creamy color. After pour water above gradually and stir the mixture constantly until it gets the consistency of sour cream. Next add the mushrooms and onion, boil till the mass becomes thick. At the end of cooking add salt, pepper and sour cream. Stir everything, bring to boil again and remove the fire. The sauce is done.

Transfer the cooked potato flapjacks on a serving plate, top them with the prepared mushrooms sauce and serve.
