Pukhkenyky

Ingredients:

  • 1.5 cup of flour
  • 1.5 cup of water
  • 6 eggs
  • 1 tbsp of sunflower oil
  • 1/4 of vanilla stick
  • 1/4 cup of sugar
  • 100 g of fat (oil)
  • 100 g of jam
  • 100 g of dried breadcrumbs/100 g of caster sugar

Cooking

Combine water and dairy butter. Bring the mixture to boil. Add flour and stir everything thoroughly over medium heat until the pastry would come off the pan. Cool the pastry slightly (to 60-70°C). Then add 6 yolks one by one. Beat up whites separately. Place them in the pan gradually.

Preheat fat or oil in a frying pan. Put the prepared pastry in a spoon and dip it in boiling fat. Fry until the pastry gets a golden color. Repeat the procedure until you use the pastry.

Arrange the fried pukhkenyky on a plate, roll them in dried breadcrumbs mixed with vanilla or powder with caster sugar. You can serve the pukhkenyky with some jam. Serve in hot and hot.
