Pork roll


  • 1 pork shin
  • 1 carrot
  • 1 bulb onion
  • 1 bay leaf
  • 5 allspice berries
  • black ground pepper – to taste
  • salt - to taste


Wash a pork shin and slit it. Remove the bones. Rub the pork with salt and pepper. Twist the meat in a roll, bind it with a thread. Put the pork in a pan and boil together with a peeled carrot, bulb onion, a bay leaf and allspice berries. Then cool the roll and put a press over it for some time. Remove the thread. Cut the roll into thin slices and serve.
