Savory Carrot Salad

I am glad to share the recipe of a delicious fall salad that will become a perfect addition to some meat or fish dish.

This vegetable salad attracts not only because of its color but also because of its piquant taste. Sliced carrot in a lemon and vegetable oil dressing accompanied with a symphony of flavors of herbs and spices. Can you still resist this?

The preparation takes only a couple of minutes. So, if you do like easy and quick recipes of healthy food, then this salad is just the option. By the way, this salad is savory but not spicy and you may treat your children as well.

Ingredients:

  • 1/2 lemon
  • 1/2 tsp paprika
  • 1/4 tsp saffron
  • 1 clove of garlic
  • 3-4 parsley twigs
  • 2 tbsp sesame seeds
  • 350 g (12 oz) carrot
  • 1,5 tbsp vegetable oil
  • 1/2 tsp ground chili pepper

Cooking

Wash and peel carrots. Boil them for 10 minutes and slice the carrots into thin circles. Peel a clove of garlic and chop it finely. Wash a lemon and squeeze juice. Combine the garlic, paprika, saffron, sesame seeds, and ground chili pepper. Pour above lemon juice and vegetable oil. Rinse and chop parsley. Add it to the mass. Mix everything carefully. Add the carrot, stir the ingredients and place the salad in a fridge for a couple of hours to let it marinate.
