Ukrainian fish soup Shcherba

Shcherba is a fish soup which the Ukrainian kozaks cooked in Zaporizhia. Today we are going to boil this great fish soup with onion and bay leaf.

Ingredients:

  • 200 g ruff
  • 200 g perch
  • 1 bulb onion
  • 1 tbsp dairy butter
  • bay leaf
  • dill – to taste
  • parsley – to taste
  • salt – to taste
  • ground black pepper – to taste

Cooking

Peel the ruff and perch. Separate the fish fillet from the bones and heads. Pour bones and heads with water. Add cut bulb onion, bay leaf, salt and pepper. Mix the ingredients and boil them over medium heat for 2-3 hours until the half of the liquid exhales.

Filter shcherba through the sieve, bring it to boil and add the ruff and perch fillet. Boil the ingredients until done.

Top shcherba with chopped dill and parsley and season it with dairy butter before serving.
