Solianka – is a dish of stewed meat and vegetables with spices. It is very nourishing and rather savoury.


  • 50 g of kidney
  • 50 g of pork
  • 20 g of lard
  • 20 g of sour cream
  • 60 g of bulb onions
  • 50 g of pickled cucumbers
  • 40 g of tomato paste
  • 5 g of garlic
  • 10 g of capers
  • 20 g of lemon
  • 1000 ml of water
  • salt – to taste
  • red ground pepper– to taste
  • dill/parsley– to taste


Place pork and kidney in a pan, pour them with 1 l (liter) of water, boil a broth. Then filter it. Peel, cut bulb onions finely and brown the onion. Peel and grate a clove of garlic. Preheat lard on a frying pan and stew the garlic. Peel cucumbers, take off seeds and slice the vegetables.

Cut the boiled meat into thin slices, add tomato paste, red ground pepper, the prepared onion, cucumbers and garlic. Stir everything and stew for 5 minutes.

Pour some broth above, salt the mass and stew 5 minutes more. Place everything into the pan with the boiled broth and mix.

Ladle the done solianka into bowls. Add capers, 2-3 slices of lemon and finely cut dill/parsley before eating. Serve sour cream in a separate dish.
