Only imagine how tasty is spiced mackerel baked in own juice and served with crispy pickled vegetables. Although the simplicity of the recipe the fish has a delicious flavor and taste, preserving the usefulness of the minerals and vitamins. The mackerel is lean and can be served as a light dinner.
- 700 g (1,5 lb) mackerel fillet
- 4 bulb onions
- salt – to taste
- basil – to taste
- 3 cloves of garlic
- caraway – to taste
- olive oil (for greasing)
- sweet marjoram – to taste
- black ground pepper – to taste
- 1 tbsp finely chopped salt pork
Rinse and scale the mackerel fillet. Cut the fish into medium stripes.
Peel and squeeze cloves of garlic. Peel bulb onions and fry until translucent on the melted salt pork.
Rub the fish with spices and the prepared garlic. Transfer the fillet to the baking sheet covered with foil (brush the foil with olive oil beforehand). Add the onion. Cover the mackerel with another piece of foil and bake it until cooked through. After put the fish into plates and serve with pickled vegetables.
