Sponge Cake with Currants

Having a good recipe for a sponge cake is very important and when we finally find one which works, we hang onto it.

Today I am going to share one such recipe with you. Once cooking this delicious cake with light and fluffy texture you will never ever forget it.

Believe me, this porous cake with two layers separated by a cheesy filling with berries will become one of your family favorites. This recipe is definitely worth trying.


  • 4 eggs
  • 3/4 cup of flour
  • 1/2 cup of hot water
  • 1/2 cup of red currants
  • 1/2 cup of black currants
  • 1/4 cup of cocoa powder
  • 150 g (5 oz) cottage cheese
  • 1 1/2 cup of powdered sugar
  • 2 tbsp cocoa powder (for decoration)


Combine eggs and powdered sugar. Whip the mass until frothy. Then combine cocoa powder and hot water in a bowl. Beat the mixture until smooth. Add the egg mass. Stir everything carefully.

Sift flour twice. Add the cocoa-egg mass and mix one more time. Pour the prepared batter in a baking tray covered with parchment paper. Preheat an oven to 180°C (356°F). Place the cake in the oven and cook it for 15 minutes until thoroughly baked. Let the cake cool for 5 minutes.

Combine cottage cheese, black and red currants. Cut the baked cake in half. Grease one pie crust with the prepared mass. Put the second pie crust above. Top the cake with cocoa powder and serve.
