Suckling pig roast with buckwheat



  • 1 suckling pig
  • 250 g buckwheat
  • 100 g lard
  • 2 tbsp dairy butter
  • 1 bulb onion
  • 2 eggs
  • salt – to taste
  • ground black pepper – to taste


Clean the suckling pig inside and out thoroughly and remove the eyeballs. Place it in cold water for 1,5 – 2 hours. Then dry it with a napkin and salt inside.

Let’s cook the stuffing. Boil buckwheat. Peel bulb onion and chop it. Fry it on lard. Then add finely cut liver and kidney of the suckling pig. Fry the ingredients.

Boil eggs, peel and cut them finely. Pepper and salt them. Mix everything thoroughly and stuff the suckling pig. Place it in an oven and bake till crisp.

Cut the suckling pig into portions and pour them with heated dairy butter before serving.

You can also serve the suckling pig on a big platter and decorate it with vegetables and greenery.
