Tomato, Eggplant, and Cucumber Salad

According to the recipe of this vegetable salad an eggplant is fried and combined with fresh tomatoes, cucumbers, and chili pepper. Ingredients:

  • 1 eggplant
  • 2 tomatoes
  • 3 cucumbers
  • 1/2 chili pepper
  • 3 parsley twigs
  • sunflower oil (for dressing)
  • black ground pepper – to taste
  • salt – to taste

Cooking

Peel an eggplant, cut it crosswise into slices. Preheat sunflower oil in a frying pan and cook the eggplant slices on both sides till brown. Wash vegetables. Cube cucumbers and dice tomatoes. Peel a chili pepper, remove the seeds and slice it. Rinse parsley twigs and chop them finely. Combine all the ingredients in a bowl. Adjust salt and pepper to your taste. Dress the salad with sunflower oil and mix everything until well combined.
