Vegetable salad with veal

410_11_11_2012_936This veal salad with tomato, cucumber, and beans is rather rich and tasty. The dish is healthy, while it doesn’t contain any fried components. At the same time the good combination of vegetables and veal gives the salad some special taste.


  • 3 tomatoes
  • 1/2 bulb onion / leek
  • 1 tin of cannellini beans
  • 1 pickled cucumber
  • 1 clove of garlic
  • 300 g (0,66 lb) veal
  • 3-4 tbsp olive oil
  • parsley – to taste
  • basil – to taste
  • balsamic vinegar – to taste
  • salt – to taste
  • lettuce leaves


Bring water to boil in a pan and place veal there. Boil the meat. Next cool it a little and cut into medium pieces.

Place cannellini beans in a plate and leave the juice in a tin. Peel onion. Cut the onion and tomatoes into semi-circles. Slice a pickled cucumber. Peel and squeeze garlic. Combine the left juice, olive oil, balsamic vinegar and salt. Stir everything carefully. Mix the prepared ingredients and place the salad in a fridge for half an hour. The veal should be combined with all the salad ingredients in order to let the meat soak.

Place lettuce leaves on a plate, put the salad above and serve it.
