Traditional cookies Kozuli

Kozuli – are ritual cookies made of rye / wheat flour. These cookies were often baked in the form of cows, sheep, horses. The sweet treat was presented to the relatives and carolers. Kozuli were also hung as a protective amulet at home. Along with that the pastry was used for fortunetelling during Christmastide. Today we are going to bake cookies with cinnamon, ginger, and nutmeg.

Ingredients:

Dough

  • 4 cups of sugar
  • 1,5 cup of boiling water
  • 400 g margarine
  • 3 eggs
  • 5 yolks
  • 2 whites of the egg
  • 1/2 tsp of salt
  • 2 tsp soda
  • spices (2-3 tbsp as a whole):
  • cinnamon
  • cardamom
  • ginger
  • nutmeg
  • ground cloves
  • 1,6 – 1,8 kg of flour

Icing

  • 1 cup of sugar
  • 1 cup of boiling water
  • 2 drops of double vinegar

Cooking

Place 2 glasses of sugar in a heavy-bottom frying pan. Melt it over medium heat until it gets golden color. When the sugar melts completely, then pour 1,5 glass of boiling water in the pan carefully and slowly. Take care, the liquid will begin to simmer and splash. Mix until you get the homogenous mass. After add 2 glasses of sugar. Mix everything until the sugar dissolves entirely. Add 400 g of margarine to the syrup. Stir the ingredients, pour them in a deep pan and cool.1264776451059

Whip 3 eggs and 5 yolks. Fold in the mixture to the cooled syrup. Next add 1/2 tsp of salt, 2-3 tbsp of spices (cinnamon, cardamom, ginger, nutmeg, ground cloves) and 2 tsp of soda. Add sifted flour gradually. Knead dough. Place the dough in a cool place for a day or a night.

Then roll the dough (its layer thickness should be 0,5 – 0,7 cm). Cut out the figures. Bake kozuli in an oven at 180 – 200 °C.

Icing

Froth 2 whites. Combine 1 glass of sugar and 1 glass of water. Boil the syrup. Bring it to boil. Then turn off the fire and add the whipped whites. Beat everything in a mixer carefully. Then mass should get a thick consistency. Add 2 drops of double vinegar at the end. You can use food colouring in order to decorate kozyli bright and graphically.
