Sbiten (Honey Herbal Drink)

The winter has already come and I am going to share the recipe of a hot aromatic drink to warm you up in a cold winter day. All of us have tried various tea and coffee recipes. However today we are going to cook something a little different from the usual and traditional drinks.

We are going to boil the ancient hot drink that is called ‘Sbiten.’ This amazing drink includes the combination of honey, cinnamon, cloves, mint, hypericum, ground ginger, and black eyed peas. You will enjoy its delicious flavor and unique taste.

Ingredients:

  • 2 tsp mint
  • 150 ml honey
  • 1/4 tsp cloves
  • 1 tsp cinnamon
  • 2-3 tsp hypericum
  • 5-6 black eyed peas
  • 100 g (3,5 oz) sugar
  • 1,5 – 2 l (liter) water
  • 1/4 tsp ground ginger

Cooking

Pour honey in a stew pan and bring it to boil. Dissolve honey with 1 cup of water. Scum the mixture well.

Place sugar in a separate pan. Add 1 cup of water and bring it to boil. Add the honey mass and cook everything together to get a homogenous mass and let water evaporate (boil the drink over low heat).

Combine mint, cloves, cinnamon, hypericum, black eyed peas, and ground ginger in a separate pan. Pour water above and boil the ingredients for 15-20 minutes. Then set them aside for 10 minutes. Filter the mass and add the honey-sugar mixture. Stir to combine. Preheat the drink but do not bring it to boil. Serve the boiled sbiten hot.
