In Ukraine the 19th of December is the day of Saint Nicholas, patron saint of children. One of the most magic and pleasant moments is that Saint Nicholas came at night and puts some presents under the pillows of children. Kids are waiting for this feast no less than for the New Year or Christmas.
The coming feast gives us the opportunity to show ourselves as secret helpers of Saint Nicholas. It is your personal choice whether to give your love and care to your children, friends, or may be orphans.
For that purpose, today I am going to share the recipe of delicious honey cookies which you can present on this day.
Ingredients:
- 1 egg
- 1 yolk
- 1/2 tsp soda
- 200 ml honey
- 2 cups of flour
- cloves – to taste
- 1/2 cup of water
- cinnamon – to taste
- 10 tbsp powdered sugar
Glaze
- powdered sugar
- 1 white of an egg
Cooking
Dissolve powdered sugar in water. Boil the mixture over low heat until you get a syrup. Combine honey with an egg, cinnamon, cloves, soda, and some spoons of flour. Mix everything carefully and whip the mass. Add the warm syrup and flour gradually. Knead the elastic dough. Place it in a fridge for 12 hours.
Roll the dough thinly on a floured surface. Cut any figures you like with cookie cutters. Powder a baking tray with flour and transfer the cakes there. Bake them in the preheated oven until golden. Let the cakes cool.
Whip the white of an egg with powdered sugar. Top the cakes with the prepared glaze and serve.
