Do you love cakes? Do you love jelly? May be you love both of them? I have a wonderful idea for you. What about combining tender cheesy crust with cherry jelly and juicy berries? Isn’t it tempting? Then hurry up with me to the kitchen. Let’s make this impressive dessert and treat our relatives. They will be delighted with this luscious cake.
You’ll get a wine-colored cake with a cherry jelly spread over the crust. It is so moist that it melts in your mouth. In addition, this cake requires no baking.
Ingredients:
- 2 tsp gelatin
- 4 tbsp sugar
- 150 ml yoghurt
- 2 tbsp lemon juice
- 100 ml cream (11%)
- 1 package of cherry jelly
- 125 g (4,5 oz) dairy butter
- 200 g (7 oz) frozen cherries
- 150 g (5 oz) sponge biscuits
- 300 g (10,5 oz) cottage cheese
- vanillin – to taste
Cooking
Put sponge biscuits in a blender and blend until finely crushed. Melt dairy butter and combine with the sponge biscuits. Cover a baking tray with parchment paper. Transfer the prepared mass to the baking tray. Place the tray in a fridge for 30-40 minutes.
Dissolve gelatin in 100 g of cream. Let it swell. In 20-30 minutes cook the gelatin on water bath until it dissolves completely, stirring it continuously. Don’t bring the mass to boil during the cooking process! Then let the mass cool.
Combine cottage cheese with yoghurt, sugar, lemon juice, and vanillin. Add the gelatin and mix everything thoroughly. Place the cream above the crust and put it in a fridge for 2 hours to let the cream set.
Arrange unfrozen cherries above the crust and pour the warm jelly above. Place the cake in a fridge until it sets completely.
