Veal, Mushroom, and Vegetable Soup

This is the recipe of a nourishing soup you will love!

This soup has everything a homey soup may need – tender meat, flavorful mushrooms, juicy vegetables, and a fragrant chili pepper.

In addition, this soup has a rather easy recipe that will not take much of your time.

This hearty soup will really hit the spot. When its tantalizing smell will fill your house, all your family members will run to your kitchen to enjoy the bowl of goodness. I should think so! How can they miss such a tasty treat.


  • 2 carrots
  • 2 bay leaves
  • 6-8 potatoes
  • 2 bulb onions
  • 1/2 chili pepper
  • 800 g (28 oz) veal
  • 2 tbsp vegetable oil
  • 40 g (1,5 oz) dried mushrooms
  • fresh parsley – to taste
  • celery root – to taste
  • fresh dill – to taste
  • salt – to taste


Soak dried mushrooms in water beforehand. Then boil and slice the mushrooms. Set aside the mushroom broth and then filter it. Add the diced veal to the broth and boil it for half an hour. Then salt the soup. Add peeled and cubed potatoes as well as the mushrooms. Continue to boil the ingredients over low heat.

Peel carrots and bulb onions. Chop the ingredients finely. Fry the onion and carrot on vegetable oil until golden. In 8-10 minutes before the end of boiling add the onion and carrot. Then add chili pepper and leave it in the soup for 10 minutes and remove it.

Wash fresh parsley, dill, and celery root. Peel the celery root and cut it finely. Chop the dill and parsley. Combine the ingredients.

Laddle the hot soup into bowls. Finish each bowl of soup with the parsley, dill, celery, and bay leaves before serving.
