Pancakes with Cheese, Raisins, and Lemon

110316A tasty breakfast doesn’t have to be hard to make. So, if you love easy and yummy recipes, this one is for you. We are going to fry the pancakes that have a very simple recipe and are so tasty that you can eat them with your hands.

These pancakes have a nice, hearty texture. Their luscious filling includes the mix of tender cottage cheese, soft sour cream, sourish lemon, and juicy raisins. The touch of lemon adds a little kick of freshness to the pancakes while raisins impart a hint of sweetness to them.


  • 2-3 eggs
  • 1 tbsp sugar
  • 500 ml milk
  • 1 tbsp vegetable oil
  • 240 -320 g (8,5 - 11 oz) flour
  • salt – to taste


  • 1/4 lemon
  • 5 tbsp raisins
  • 2-4 tbsp sugar
  • 2 tbsp sour cream
  • 250 g (1/2 lb) cottage cheese


Combine flour with milk, eggs, sugar, salt, and vegetable oil. Mix everything carefully. Preheat skillet, spoon batter onto the skillet surface and fry a pancake on both sides until golden. Cook until you use all the batter.

Place raisins in a bowl and pour them with boiling water. Leave the raisins for 15 minutes. Pour out the water. Wash lemon and grate it. Then add sugar and stir to combine.

Mix cottage cheese with sour cream thoroughly. Add the raisins and lemon. Stir everything carefully.

Place the prepared filling at the edge of the pancake. Roll the pancake. Repeat the procedure until you use all the ingredients.
