Thick pancakes with grapes

Grapes don’t get enough love in cooking, so I decided to experiment a little and post this amazing recipe for thick pancakes with green grapes.

These thick pancakes are a wonderful idea to turn leftovers into a great meal while kishmish grapes add the dessert an unusual and bright taste. The pancakes prepared according to this recipe are exceptionally fluffy and tender.

Ingredients:

  • 3 eggs
  • 3 tbsp sugar
  • 1,5 tsp leaven
  • 400 ml cream
  • a pinch of salt
  • 50 ml vegetable oil
  • 400-450 g (14-15 oz) flour
  • kishmish grapes – to taste

Cooking

Whip eggs slightly in a big bowl. Then add sugar, salt, cream, leaven and flour. Mix the ingredients thoroughly. Knead the batter. Add rinsed kishmish grapes to the batter and stir to combine (it is recommended to use grapes without seeds).

Preheat vegetable oil in a frying pan. Drop spoonful of the batter into the pan. Fry, lifting delicately with tip of spatula to check underside, until golden. Then gently turn over the pancakes and cook the other side. Repeat till all the batter is used.

Serve these awesome thin pancakes right away with a dollop of your favorite jam or honey over the top.
