Cheese cake with raisins

What could be better than a comforting cake eaten with your beloved? And here is the recipe of an awesome dessert which is easy to cook and delicious to eat. Treat your guests with this amazing cheese pudding with raisins. Topped with your favorite jam or honey, each bite of the dessert just melts in your mouth.

This is a cake which always gets many great compliments. Your family and friends will surely love the combination of tender semolina and soft cottage cheese. Flavored with vanilla, this dessert tastes heavenly and becomes more irresistible.

Ingredients:

  • 2 eggs
  • 3 tbsp sugar
  • 150 ml milk
  • 3 tbsp semolina
  • 60 g (2 oz) raisins
  • 2 pinches of vanilla
  • 500 g (1,1 lb) cottage cheese
  • dairy butter (for greasing)

Cooking

Wash raisins carefully. Pour boiling water on the raisins and leave them for 5-10 minutes. Drain water and transfer the raisins to a kitchen towel. Let them dry.

Combine semolina and milk. Stir everything carefully. Wait until the semolina swells. You can use warm or hot milk to speed up the process.

Mix eggs and sugar. Beat the mass until smooth. Then add cottage cheese. Stir the ingredients. Add the semolina with milk. Stir in raisins. Mix everything thoroughly.

Grease a baking tray with dairy butter. Arrange the prepared mass there. Put the pudding in the preheated oven. Bake it at 180°C (356°F) for 30-40 minutes till golden-brown.

You may serve this cheese pudding hot or cold, topped with any fruit or berry jam, sour cream or honey. Here you can choose whatever you or your family members prefer more.
