This pie is juicy and tasty on its own – just one layer loaded with poppy seeds and walnuts.

A poppy seed pie has a Slavic origin. Compared to other pies of the Ukrainian cuisine, it is not cooked using yeasted dough and doesn’t have an additional filling. In fact, this pie is just a kind of biscuit, and it has a very easy recipe and an amazingly tasty result.
Ingredients:
- 125-130 g (4,5 oz) poppy seeds
- 4 eggs
- 100 g (3,5 oz) sugar
- 125-130 g (4,5 oz) dairy butter
- 140 g (5 oz) flour
- 1 tsp baking powder
- 115 g (4 oz) walnuts
- A pinch of salt
Cooking
Put poppy seeds in a pan, add enough water to cover poppy seeds about 3 cm above. Then cover the pan with a lid and boil the mass for 5 minutes. In 5 minutes turn off the fire and let poppy soak for 20 minutes. Then pour off the water and let poppy seeds drain in a fine strainer.
Separate whites from yolks. Use a mixer or a whisk to beat whites of eggs.
Add sugar to the yolks and beat them until they change their color. Continue to whip the yolk mass and stir in melted butter, salt, flour, and baking powder. At the end add chopped walnuts.
Tip: the taste of walnuts will be better if you toast them slightly in the oven or in a frying pan.
Stir in boiled poppy seeds to the dough. Then add spoons of whisked egg whites one by one.
The dough is ready, so you need to find a baking mold and grease it with dairy butter or top with flour. Then transfer the dough to the mold and flatten it evenly. Bake your poppy seed pie at 180°C (356°F) for 40 minutes. Let it cool for 10 minutes.
