In Ukraine this appetizer is considered to be one of the most beloved ones during Christmas and New Year’s Eve holidays. This pickled tomato, cucumber, pepper, and carrot starter will be eaten just in minutes. Believe me!
For 1 liter jar:
- 2-3 tomatoes (medium size)
- 2-3 cucumbers (medium size)
- 100 g cauliflower
- 2-3 cloves of garlic
- 1 bell pepper
- 1 carrot
- 4 little bulb onions
- a bay leaf
- 1 tsp allspice
- 1 tbsp fresh dill (chopped)
- 3 tbsp vinegar (9%)
- 2 tsp salt
- 1 tsp sugar
Wash vegetables and dill carefully. Chop the dill. Cut a cauliflower into florets. Peel bulb onions and a garlic bulb. Peel a bell pepper and cut it into stripes. Peel a carrot and cut it into circles.
Place the dill, garlic, bay leaf and allspice on the bottom of the jar. Fill the jar with the prepared vegetables to the brim.
Pour water in a pan. Add sugar and salt. Bring water to boil. Boil the marinade for 1-2 minutes. Turn off the fire and pour vinegar. Mix everything thoroughly. Pour the vegetables with the boiling marinade. Try to pour the marinade in the center of the jar in order to warm up the jar evenly. Cover the jar with a sterilized plastic cap.
Sterilize it for 10 minutes after the boiling. Cork up the jar hermetically and cool it.
