Omelette with Cauliflower and Mushrooms

200316Let’s cook a tasty and fulfilling omelette with tender texture. It has healthy nutrients in its every bite. The combination of cauliflower, mushrooms, and hard cheese works very well. You can use fresh or frozen cauliflower, whatever you have or prefer more. A pinch of ground nutmeg will give this veggie omelette an exotic twist.

When you tasty this dish, it melts in your mouth. Enjoy it with a dollop of sour cream.


  • 4 eggs
  • 2-3 tbsp milk


  • 1-2 tsp vegetable oil
  • 55 g (2 oz) hard cheese
  • 200 g (7 oz) cauliflower
  • a pinch of ground nutmeg
  • 100 g (3,5 oz) mushrooms
  • sour cream (for serving)
  • salt – to taste


Peel, wash, and slice mushrooms. Fry the mushrooms on vegetable oil for 5 minutes. Rinse cauliflower and cut it into quarters. Add the cauliflower to the mushrooms and continue to cook for 5 minutes.

Whip eggs with milk. Add grated cheese, ground nutmeg, and salt. Stir to combine. Pour the mixture over the cauliflower with mushrooms. Cover the frying pan with a lid and continue to cook the omelette for 15 minutes more.
