Roasted Fish with Mushrooms Under Cheese

Eating smart means eating healthy and at the same time deliciously. If you are looking for a satisfying recipe, then this one is just the ticket. This dish will become a great weekday dinner.

I am glad to share the recipe for this roasted fish which is both useful and nourishing. This recipe includes tender fish fillet baked together with mushrooms, carrot, and onion with a layer of melty cheese on top.

Nourishing enough to serve without any side dish, it will save your time which you can spend with your family members.

Ingredients:

  • 1/2 lemon
  • 1 bulb onion
  • 4 medium carrots
  • 200 ml sour cream
  • 1/2 bunch of fresh dill
  • vegetable oil (for frying)
  • 400 g (14 oz) silver carp
  • 250 g (1/2 lb) hard cheese
  • 300 g (10,5 oz) champignons
  • black ground pepper – to taste
  • red ground pepper – to taste
  • salt – to taste

Cooking

Wash and scale fish. Remove the bones. Cut the silver carp into medium stripes. Rub the fish with the mix of salt, black ground pepper, and red ground pepper. Place the silver carp in the fridge for an hour.

Wash, peel, and slice the champignons. Peel and grate carrots. Peel and chop a bulb onion finely. Preheat vegetable oil in a frying pan and put the carrot with onion there. Stew the ingredients for 10-15 minutes. Then add the mushrooms and continue to stew the ingredients for 15 minutes more.

Grate hard cheese. Wash and cut parsley finely. Rinse and cut lemon in semi-circles. Cover a baking tray with foil. Arrange the pieces of fish there. Add the lemon above. Grease the fish with sour cream and top with the parsley. Then transfer the stewed mushrooms with carrot and onion to the baking tray. Top everything with grated cheese.

Place the dish in an oven and bake for 50-60 minutes until done.
