Tomatoes packed in own juice

Fresh, firm, and ripe tomatoes are great, however they are seasonal and we can not eat them the whole year round. Hurry up and preserve these vegetables before tomato season comes to a close.  Tomatoes in their own juice are very tasty and flavorful.

Cook preserved tomatoes and enjoy these awesome vegetables the whole winter. The tomatoes cooked according to this recipe will perfectly match a lot of dishes, whether it be roasted meat, baked fish, spaghetti, etc. Now you’ll be able to use them each time you feel urge for juicy tomatoes. Believe me, all your family members will appreciate such delicious veggie addition to your winter dishes. Plus, you can treat your guests while some gatherings and serve them these preserved tomatoes as a healthy appetizer.

Ingredients:

  • 2,5 tbsp salt
  • 3 tbsp sugar
  • 2 bay leaves
  • 2 allspice berries
  • 5 black peppercorns
  • 4 kg (8,8 lb) tomatoes
  • 1,5 l (liter) tomato juice

Cooking

Wash 2 kg (4,4 lb) of tomatoes thoroughly. Prepare clean glass jars and arrange the tomatoes there. Pour boiling water above the tomatoes and cover the jars with lids.

Wash remaining tomatoes and mash them in a blender or rub through a sieve. Season the juice with salt, sugar, and black peppercorns. Stir the drink carefully and pour it in a pan. Boil the tomato juice for a quarter of an hour.

Pour the water out of jars. Pour the cooked tomato juice into the glass jars. Cork up the jars hermetically.  Allow the jars to cool completely, undisturbed, before you move them.

Keep the preserved tomatoes in their own juice under room temperature.
