Warm chicken liver, onion, carrot, and pepper salad

This yummy liver salad with carrot, pepper, and red onion is a real treat. The dish is rich and full of nutrients. If you want to serve your family or guests a nourishing salad, you should try this recipe. This warm salad is also great for cold season. It will warm you up and fill your stomach.

This salad perfectly combines tender chicken liver with such vegetables as a bell pepper, carrot, and red onion. One more secret of this salad is its grape vinegar dressing which complements the delicacy of the liver and makes the dish so irresistible.

Ingredients:

  • 1 carrot
  • 2 bell peppers
  • 4 tbsp olive oil
  • 1 red bulb onion
  • 1 tsp grape vinegar
  • 1/2 bunch of fresh parsley
  • 300 g (10,5 oz) chicken liver
  • black ground pepper – to taste
  • salt – to taste

Cooking

Wash chicken liver thoroughly. Pour it with boiled water and then dry the liver. Cut it into cubes.

Preheat vegetable oil in a frying pan and put the liver there. Fry the liver until golden. Then pour some water above and stew the liver for 10 minutes (do not cover the lid).

Peel and wash a carrot. Grate it finely. Peel and rinse a bulb onion. Cut it into thin semi-circles. Transfer the onion to a bowl and scald it. Drain the water. Then pour cold water above the onion and leave for a couple of minutes. Then drain the water again.

Wash and peel bell peppers. Cut them into circles and fry the pepper for 1-2 minutes.

Put the prepared liver on a serving plate. Place the onion and carrot above. Top the ingredients with the bell pepper. Wash and chop parsley finely. Add it to the salad.

Combine grape vinegar, pepper, and salt in a separate bowl. Mix everything carefully. Dress the salad and stir to combine.
