This recipe is the one for the meat and potato lovers. It is a new twist on plain potato soup.
Containing tender chunks of beef, soft potato, juicy tomato and bell pepper, this soup is completely satisfying. This dish is a great idea to end a long day.
Seasoned with thyme and red ground pepper, this soup is wonderful to the last spoonful. It is even more tastier when served with a slice of crusty bread.
- 1 tomato
- 1 bell pepper
- 2 garlic cloves
- 200 ml pork broth
- 600 g (21 oz) beef
- 400 g (14 oz) potatoes
- 300 g (10,5 oz) bulb onions
- red ground pepper – to taste
- thyme – to taste
- salt – to taste
Peel and wash bulb onions. Chop them finely. Fry the onion until golden.
Cut beef into medium pieces. Add the meat to the onion. Add red ground pepper to your taste. Pour some water, cover the lid and stew the ingredients.
Peel and squeeze garlic. Then combine it with thyme. When the water dissolves add the thyme with garlic and pour some water above.
Stew the ingredients for 20-25 minutes. Add water if necessary.
Peel and wash potatoes. Dice the potatoes and add them to the frying pan. Stir the mass for 15-20 minutes more.
Wash and cut a bell pepper and tomato finely. Add them to the pan. Pour the pork broth above. Stir to combine and pour the soup into bowls. Serve the dish hot.
