Potato, cheese, and carrot soup with chicken broth

Ingredients:

  • 1 carrot
  • 2 potatoes
  • 300 g (10,5 oz) cream cheese
  • 2 l (liter) chicken broth
  • rusks – to taste

Cooking

Rinse and peel a carrot. Grate the vegetable. Then peel and wash potatoes. Cut the potatoes into cubes.

Pour the chicken broth into a pan and bring it to boil. Dip the carrot and potatoes into it. Stir everything carefully to combine. In 10 minutes, add the cream cheese which was cut into cubes beforehand. Mix the ingredients. Stir the soup until the cheese melts completely and then cover the pan with a lid. Cook the dish for 7-8 minutes more.

Ladle the soup into bowls and top it with rusks. Serve the dish at once.
