Cake ‘Raspberry Heart’

This cake with red berries is very romantic and appetizing. Tender crust under wonderful cream which includes cottage cheese, powdered sugar, and berries.

Raspberries make a flavorful and juicy topping and turn the cake into a complete perfection. If you don’t have raspberries you can substitute them with any other red berries you like or have.

Ingredients:

  • 3 eggs
  • 1 tsp leaven
  • 2 tbsp sugar
  • a pinch of salt
  • 200 g (7 oz) wheat flour
  • 150 g (5 oz) dairy butter
  • vanillin – to taste

Cream

  • 1 tsp gelatin
  • 2 tbsp powdered sugar
  • 100 g (3,5 oz) raspberries
  • mint leaves (for decoration)
  • 100 g (3,5 oz) cottage cheese
  • 200 g (7 oz) raspberries (for decoration)

Cooking

Combine dairy butter with sugar and vanillin. Whip until fluffy. Then add eggs one by one. Whip the mass each time after adding the egg.

Mix flour, leaven, and salt separately. Add them to the mass and knead the dough. Grease a baking tray with dairy butter. Transfer the dough there and bake the crust  at 180°C (356°F) until golden.

Wash and mash raspberries. Add powdered sugar and gelatin. Boil the mass for 5 minutes over low heat. Then let it cool. Combine the mass with cottage cheese.

Grease the crust with the prepared cream. Decorate the cake with raspberries and mint leaves.
