These crispy, lightweight, and tender waffles taste so great that can be eaten before you know it.
Almost every Ukrainian family still have an old-fashioned waffle iron bought in the USSR and remember the taste of sweet and crunchy homemade waffle tubes. It’s time to refresh old memories and cook these delicious waffles once again.
I’ll use a Soviet waffle maker, which is rather hard to find nowadays, you may use a new waffle maker if you wish.
We’re going to stuff waffles with flavorful strawberries and tempting caramelized milk. For the ultimate combination, we’ll top the dessert with sesame seeds.
Ingredients:
- 6 eggs
- a pinch of salt
- 1 tsp baking power
- 2 tbsp vanilla sugar
- 235 g (8 oz) sand sugar
- 250 g (1/2 lb) dairy butter
- 400 g (14 oz) flour
Filling
- 300 g (10,5 oz) strawberries
- 100 g (3,5 oz) sesame seeds
- 1/2 tin of caramelized milk
Cooking
Beat 6 eggs in a large bowl. Stir in vanilla sugar, sand sugar, and a pinch of salt. Whisk the mass until fluffy. Add dairy butter of a room temperature. Mix everything carefully.
Combine flour and baking powder in a pan. Sift the mass. Add the flour gradually to the egg-butter mixture. Blend together all ingredients until they are fully incorporated.
Preheat the waffle iron, and pour about 1 tbsp of the batter in the center of the surface. Close the lid and fry the waffle until golden, for about 2-3 minutes (the time of cooking depends on whether you have a simple waffle iron or electric one. You need to practice to find the right time of cooking). It’s recommended to cook each waffle for at least one minute before opening the lid to let the batter firm up.
Transfer the cooked waffle with a spatula to a flat surface. Roll it in a tube at once, till it is hot, since when the waffle cools, it will be no longer elastic. The space inside the waffle should be about a half inch in diameter. If it is bigger, then you’ll need too much caramelized milk to fill it, if it is smaller, it will be rather difficult to fill the tube. You may also shape the waffle in the form of a cone if you wish.
Continue to bake waffles the same way till you use all batter.
I will fill waffles with caramelized milk and sliced strawberries. Then top them with sesame seeds. But you can stuff the waffles with any of your favorite fillings. Whether it’ll be condensed milk, custard, or whipped cream, it’s all up to you.
