Five delicious recipes for uzvar (dried fruit compote)

 

Uzvar is a vitamin drink made of fruits and berries, most often – dried ones. In Ukraine, this drink is one of the 12 most important recipes of a Christmas table.

The dried fruit compote should be dark and translucent (not cloudy). Used fruits can also be served – top them with sugar and try – many like such a dessert.

Today we’re going to share 5 recipes for this delicious dried fruit drink.

Traditional uzvar

Ingredients:

  • 100 g (3,5 oz) dried apples
  • 100 g (3,5 oz) dried pears
  • 100 g (3,5 oz) prunes
  • 60 g (2 oz) raisins
  • 3-4 tbsp honey
  • 5 l (liter) water

Cooking

Wash thoroughly dried fruits, put them in a pan and pour water above. Bring the water to boil and simmer ingredients for about an hour. Cool uzvar until warm and then stir in honey. Leave the drink for 3-4 hours to let it infuse.

 

Uzvar with dried apricots

Ingredients: 

  • 30 g (1 oz) dried apples
  • 60 g (2 oz) dried apricots
  • 60 g (2 oz) prunes
  • 60 g (2 oz) raisins
  • 120 g (4 oz) sugar
  • 2 l (liter) water

Cooking

Pour water in a pan and bring it to boil. Add sugar and thoroughly washed dried apricots. Reduce the heat and cook the mixture for 10-15 minutes. Add dried apples and prunes. Cook for 10 minutes. At the end add raisins and boil the drink for 10 minutes more. Let uzvar cool and infuse for 2-3 hours.

Uzvar with hips

Ingredients:

  • 100 g (3,5 oz) dried pears
  • 100 g (3,5 oz) dried apples
  • 100 g (3,5 oz) prunes
  • 100 g (3,5 oz) rose hip berries
  • 5 l (liter) water
  • Lemon juice – to taste
  • Sugar or honey – to taste

Cooking

Grind rose hip berries. Put them in a pan and pour 1 liter of boiling water above. Leave for twenty-four hours in a warm place.

Rinse all dried fruits thoroughly and put them in a pan. Pour 4 liters of water above. Cover the pan with a lid. Bring the ingredients to boil and cook over low heat for 10-15 minutes.

Stir in sugar at once. If you decide to add honey, then let uzvar to cool slightly.

Let the drink infuse for 2-3 hours. Strain it off and mix with the filtered rose hip berries drink. Add lemon juice to your taste. If uzvar is too intense, then you can dissolve it with boiled water a bit.

Flavorful uzvar

Ingredients:

  • 100 g (3,5 oz) dried pears
  • 100 g (3,5 oz) dried apples
  • 60 g (2 oz) prunes
  • 60 g (2 oz)  raisins
  • 60 g (2 oz)  dried sour cherries
  • 1/2 lemon
  • 1 tsp cinnamon
  • 4 clove buds
  • a pinch of nutmeg
  • 4 l (liters) of water
  • Sugar – to taste

Cooking

Put sugar in a pan. Pour water above and bring it to boil. Add dried pears, in 5 minutes add apples, in next 5 minutes add prunes and dried sour cherries, and in last 5 minutes add raisins. Cook uzvar over low heat. When all dried fruits become soft, add cinnamon and cloves. Let the drink seethe for a while. Squeeze lemon juice and add it to the pan together with lemon. Turn off the fire and let uzvar infuse for 5-6 hours.

Uzvar with hawberries and blackthorn berries

Ingredients:

  • 100 g (3,5 oz) dried pears
  • 100 g (3,5 oz) dried apples
  • 100 g (3,5 oz) prunes
  • 2 tbsp hawberries
  • 2 tbsp blackthorn berries
  • 2 tbsp rose hip berries
  • 3 tbsp raisins
  • 4 l (liter) water
  • Sugar – to taste
  • Honey – to taste

Cooking

Wash dried fruits and berries thoroughly. Put them into separate bowls and pour water above (the water should slightly cover the fruits and berries). Leave for 2-3 hours.

Pour water in a pan and bring it to boil. Add the fruits and berries together with water where they were soaking. Bring the mixture to boil. Reduce the fire and boil over the drink over medium heat for 20-25 minutes. Turn off the fire, cover the pan with a warm blanket and leave for 5-6 hours to infuse. Add sugar at the end of boiling or stir in honey after 2-3 hours after boiling.
