Mutton shashlyk

Pieces of mutton thoroughly marinated with a lemon and pomegranate juice, garlic and bulb onion. The mutton is seasoned with a medley of exciting spices of red and black ground pepper, dried basil, thyme, and coriander.

As a result we’ll get flavorful and delicious meat grilled on skewers to perfection.

Ingredients:

  • 1 lemon
  • 1 garlic bulb
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 2 tbsp vegetable oil
  • 2 kg (4,4 lb) mutton
  • 1 tsp dried coriander
  • 1 red ground pepper
  • 1 kg (2,2 lb) bulb onion
  • 1 tsp black ground pepper
  • 100 ml pomegranate juice
  • salt – to taste

Cooking

Wash mutton carefully and cut it into medium pieces. Peel bulb onions and cut them into thin semi-circles. Combine the meat with onion in a bowl and top the ingredients with salt. Mix everything thoroughly.

Combine coriander, black ground pepper, red ground pepper, dried basil, and dried thyme.

Add the mix of spices to the meat and stir to combine. Peel and chop finely 2-3 garlic cloves. Add them to the mutton and pour 2 tbsp of vegetable oil above. Cut lemon in halves and squeeze lemon juice. Then pour the pomegranate juice above. Mix everything carefully and let the mutton marinate for 4 hours in some cold place.

Place the meat on skewers and fry until done.
